Shui Xian (Water Immortal)
Shui Xian is a classic Wuyi yancha known for its leaf-forward structure, rounded body, and steady mineral depth. Compared to more aromatic yancha styles, Shui Xian emphasises balance, texture, and endurance.
Origin & Background
Originating from the Wuyi Mountains of Fujian Province, Shui Xian is traditionally produced from mature tea bushes, contributing to its fuller body and grounding presence. It is one of the foundational styles within the Wuyi yancha family.
Processing & Oxidation
Shui Xian undergoes extended withering and repeated bruising to encourage moderate to high oxidation. Oxidation is followed by deliberate roasting, which integrates the leaf structure and enhances mineral depth without overt aromatic emphasis.
- Oxidation level: Moderate to high
- Roasting: Medium, traditionally charcoal-based
Sensory Profile
- Aroma: Roasted grain, soft wood, mineral notes
- Flavor: Warm grain sweetness, stone mineral, gentle cocoa
- Mouthfeel: Full, rounded, steady
Caffeine & Character
Shui Xian contains a moderate to moderately high level of caffeine. Due to its mature leaf material and roasting, the energy is often perceived as grounding and long-lasting rather than sharp or stimulating.
Brewing Guidance
Shui Xian is well suited to gongfu-style brewing. Higher water temperatures help release its depth and structure, while short infusions allow the tea to unfold gradually over many rounds.
Storage & Aging
Freshly roasted Shui Xian benefits from resting before drinking. Under clean, dry, and stable storage conditions, well-roasted examples may evolve slowly, with roast and mineral structure integrating more fully over time.
