Dong Ding

Dong Ding Oolong

Dong Ding Oolong originates from Nantou County in Taiwan and is known for its balanced character, combining moderate oxidation with a gentle, supportive roast. It represents a classic Taiwanese oolong style that bridges freshness and warmth.

Origin & Background

Traditionally produced in the Dong Ding area of Nantou, this tea reflects Taiwan’s emphasis on clarity, precision, and harmony. Over time, Dong Ding has become a reference point for moderately oxidised, lightly to medium roasted Taiwanese oolongs.

Processing & Oxidation

Dong Ding undergoes controlled withering and bruising to achieve partial oxidation, typically at a moderate level. A carefully applied roast follows, enhancing sweetness and structure without overwhelming the tea’s natural aromatics.

  • Oxidation level: Moderate
  • Roasting: Light to medium, balanced

Sensory Profile

  • Aroma: Floral, honeyed, lightly toasted
  • Flavor: Soft fruit, gentle sweetness, warm grain notes
  • Mouthfeel: Rounded, smooth, comforting

Caffeine & Character

Dong Ding contains a moderate level of caffeine. Its balanced oxidation and roasting often produce a calm, steady energy that feels grounding rather than sharp.

Brewing Guidance

Dong Ding performs well in gongfu-style brewing, where short infusions reveal its layered sweetness and warmth. Slightly higher water temperatures may be used to fully express its roasted depth.

Storage & Aging

Fresh Dong Ding should be stored airtight, away from light and moisture. Well-roasted versions may benefit from resting and can evolve subtly over time when kept in clean, stable conditions.
